Colorful Greek Vegetable Toss

Do you ever get bored with your salads? Well I was, so that's why I invented this recipe instead. Salads are an easy go-to in order to bulk up the vegetables and nutrients in a meal, but oftentimes I find myself doing the same thing over and over again (lettuce, dressing), with pretty much the same ingredients. The best way to liven up a salad is to omit the lettuce, so I used zucchini and other vegetables instead. This is a real throw-together side dish, that plays on a Greek salad (without the feta cheese). My husband hates olives, so I had to omit them for his portion, and you too can play with this however you like.

Ingredients (enough for 4 servings):
Salad:
1 zucchini, chopped
1 cucumber, chopped
1 bell pepper, chopped
1 tomato, chopped
1/4 cup olives, chopped roughly (any flavor that you like; truth be told, I end up using more than this. LOVE THEM!)

Dressing:
3 tbsp olive oil
2 tbsp lemon juice
1 tbsp balsamic vinegar
1/2 tsp dried oregano
1/2 tsp dried basil
1-2 garlic cloves, minced
1/4-1/2 tsp sugar (you can add more if you like a sweeter dressing)
a pinch of sea salt
a few grinds of black pepper

1) For the dressing, whisk all ingredients together. Toss with all of the vegetables, and enjoy!
