Peanut Butter Apple Bread

If I lived a day without peanut butter, it would be the saddest day of my life. My husband and I often fight for the last scrape of peanut butter from the over-sized jar of our favorite brand. Given the choice, I would pretty much slather it on, or in anything, including this apple bread. If you didn't know already, I am desperately trying to use up the ton of apples I bought, now fermenting slightly in my fridge (Oh why am I always swayed by those jumbo sale bags of apples!). My solution, like peanut butter, stick them in everything. This bread has a rich peanut butter flavor, alongside the sweet and tart flavors of the apples. It is really easy to whip together, and tastes delicious with the crunchy peanut butter granola topping.


Ingredients (makes 1 loaf):
Bread:
1 banana, mashed
1/2 cup apple sauce
1/3 cup sugar (you can decrease the sugar if the apple sauce is sweetened)
1/4 cup brown sugar
1/2 tbsp vanilla
1/3 cup peanut butter
1 cup coarsely chopped apples (peeling is optional; about 1 apple)

1 1/3 cup flour (you can use a mixture of whole wheat/ white)
1 teaspoon baking soda
1/4 tsp baking powder
1/4 teaspoon sea salt
1 tsp cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves

 Peanut Butter Granola Topping:
1/4 cup oats
1/4 cup peanut butter
1/8 cup brown sugar
1/4 tsp cinnamon

1) For the bread, mix all of the wet ingredients and fruit together in a large bowl. In a large bowl mix all of the dry ingredients together, and then transfer to the large wet ingredient bowl, folding gently to combine. Pour the bread mixture into a prepared loaf pan. Set aside.
2) For the topping, combine all of the ingredients together in a small bowl (it will make a sticky crumble). Sprinkle on top of the bread mixture. Bake in a 350 degree oven for 50-55 minutes (or until the bread is firm to the touch, and lightly browned) Let cool slightly, slice and enjoy!
