Sweet and Crunchy Quinoa Granola

I love the taste of most granola, but HATE how unhealthy they can be. It is almost annoying how companies will trick you into thinking something is healthy, when it is in fact harmful to your health. Store bought granola, oftentimes, it is filled with sugar and fat. I assure you, this following granola recipe is HEALTHY, and worthy of your breakfast bowl. I like to eat this with almond milk, but you can also nibble on it as a snack. Either way, you don't have to feel guilty about enjoying this!

Ingredients (makes 5 cups):
3 cups oats (I like to use old fashioned, but you can use quick-cooking as well)
3/4 cup dry quinoa (soaked in water for about 1 hour, then fully drained)
1/8 cup flax seeds, lightly ground (optional, use additional nuts or seeds if not using)
1/3 cup chopped almonds
1/3 cup chopped walnuts
3/4 cup apple sauce (I use a sugar-free, homemade apple sauce)
1/8 cup water
2 tbsp agave syrup
2 tbsp maple syrup (you can use additional agave syrup, if desired)
2 tbsp molasses
1 tbsp vanilla extract
1 1/2 tsp cinnamon

1/4-1/2 tsp sea salt (taste test it to see if it is enough for your liking)
1 1/2 tbsp coconut oil (optional: this is only if you like your granola to form 'clumps', you could also use another type of oil, if desired)

1/4 cup raisins, or anytime of dried fruit

1) Combine all of the ingredients in a large bowl (except for the raisins). Spread evenly on to a lightly greased cookie sheet (if you are not using coconut oil. You may need to use more than one baking sheet). Bake in a 350 degree oven, for 30 minutes, stirring every 10 minutes (making sure it is evenly stirred so that it does not burn). Add raisins or dried fruit after it is finished baking, let cool and enjoy!

  2. LOL perfect timing! Granola with Almond Milk is my latest breakfast staple, but I HATE seeing all of those calories on the box even though I buy the one with the lowest cals & most natural ingredients. I am definitely going to make this as soon as the box runs out, I love knowing exactly what is in my food. Thanks!
