Lime and Garlic Roasted Broccoli

Roasted broccoli may just be my new favorite side dish. Broccoli, to me, is such a friendly veggie, that lends itself well to all kinds of ingredients, but it is particularly good when roasted. You can toss it with simple ingredients and be assured that it will turn out delicious. This recipe uses lime, garlic, a little olive oil, and a vegans best friend: nutritional yeast. The nutritional yeast lends a slightly cheesy, salty flavor, but works well with the tangy, citrus flavors.

 
Ingredients (serves 4-6):
2 heads of broccoli, stems rmoved
2 tbsp olive oil
1 lime, cut into 4 large wedges
4 cloves garlic, minced
1 tbsp nutritional yeast
a pinch of sea salt (or to taste)
a pinch of pepper (or to taste)

1) Place all of the ingredients into a bowl, aside from the lime wedges. Squeeze the juice out of the lime wedges, toss everything together, then toss the juiced wedges in (while the mixture roasts, the juiced lime wedges will steam even more lime flavor into the broccoli). Place the mixture into a parchment lined baking dish, and roast at 375 degrees for about 25 minutes (or until the broccoli starts gaining some color, but not allowing the garlic to burn, tossing half way through to ensure this doesn't happen). Remove the lime peels, and serve warm. Enjoy!
