Tuned Up Tuna Salad

This is from a great book called "The Vegan Table". Honestly, I swear it tastes amazing. Now, don't be alarmed if it doesn't taste exactly like 'real' tuna salad, but honestly it is pretty darn close. I was absolutely stunned when I first made this recipe.

Ingredients (makes about 6 portions):
1 can of chick peas, mashed with a potato masher
1 celery stalk, chopped
1/2 red pepper, diced
1 carrot, chopped
1/2 cup walnuts, chopped
1 tbls dried parsley
1/4 cup of mayonnaise (depending on how much you like, add more if needed)
1 tablespoon of dijon mustard
salt and pepper to taste

1) Mash the chickpeas until they are flaky. Add the rest of the ingredients and mix. Serve on sandwiches with lettuce, tomato and whatever else you like.

  1. Does it taste like tuna? I don't like the taste of fish but this sounds like it would be good.

    It doesn't taste 'exactly' like tuna...I would not say it is fishy, but it has the same texture...I think it is wayyyy better.
