Ginger Carrot Soup

Yeah, this soup is the s**t. 'Nuff said!


Ingredients (serves 5):
1 tblsp olive oil
1 tblsp of margarine (or vegan butter alternative such as Earth Balance)
2 onions, chopped
1 pound of carrots (about half of a bag), diced
4 cups of vegetable broth
2 tblsp crystallized ginger, diced (you can find this in the bulk section)
1 tsp cinnamon
1/2 tsp dried basil
1 1/2 cups of orange juice
1/2 cup of plain soy milk
salt and pepper to taste

1) Heat oil and margarine in a pot over medium heat. Add chopped onions, and saute until they become a slight brown color (caramelized).
2) Add carrots, broth, ginger, cinnamon, basil and orange juice. Simmer for 20 minutes over a lower heat.
3) Transfer to a blender, add soy milk and blend on high until smooth. Transfer back to pot, and add salt and pepper to taste. Enjoy!
