Raw Zucchini Rolls with Hoisin Dipping Sauce

I have died and gone to RAW heaven! Honestly, these are absolutely delicious. These are the sort of recipe that you feed to your 'animal ingredient' obsessed friends, and you watch them as they eat, knowing full well they are thinking "Okay, this is actually delicious". Just sayin' this recipe is a real winner. I found it on a website called "High on Health".
 Ingredients (makes 15 rolls):
Almond Cheeze
1 cup of soaked almonds (soak overnight)
1/4 cup of water
1 Tbsp of lemon juice
a large pinch of cumin
a large pinch of oregano
a large pinch of sea salt
onion powder to taste
Raw Hoisin Sauce
4 Tbsp of tamari
2 Tbsp of peanut or cashew butter
2 tsps of apple cider vinegar
1 Tbsp of agave nectar (more if you prefer it sweeter)
1 clove of crushed garlic
2 tsps of sesame oil
a pinch of cayenne pepper
Rolls
1 zucchini, sliced into thick strips with a wide vegetable peeler or any other great slicing implement that you have (You could wrap the ingredients into lettuce).
1/2 avocado (optional)
a handful of sprouts (optional, alfalfa works great)


1) Blend all ingredients for the almond cheeze until well combined. It’s okay if the mix is very chunky. Set aside.
2) Whisk all ingredients for the hoisin sauce until smooth.
3) Place a large teaspoon full of almond cheeze onto the end of each strip of zucchini, followed by a slice of avocado and a large pinch of sprouts, then roll. Enjoy!
