Blackened 'chicken' Spinach Salad

Whipped this up for an easy, healthy dinner. I don't usually like posting 'meat alternatives' because they can be tricky to find, however President Choice "The World's Best meatless Chicken", is a great chicken substitute that tastes (I think) exactly like chicken, and is easy to find in any grocery store that carries PC.

Ingredients (Makes enough for 3-4):
3 meatless chicken breasts
1-2 tblsp olive oil
1 red onion, finely sliced

1 large bag spinach
3/4 cup chopped walnuts

Dressing:
1/2 cup balsamic vinegar
1/4 cup balsamic vinegar, apple cider vinegar or rice vinegar (all will have slightly different flavors, however all work well)
1 tblsp molasses
1 small garlic clove, minced

salt and pepper to taste

- Whisk together dressing ingredients. Set aside.
- Slice 'chicken' and saute it with oil in a large pan (over medium heat). Once 'chicken' slices have browned slightly on all sides, add onion slices and saute until they are translucent, and caramalized. Pour dressing ingredients over 'chicken' mix and saute until it reduces. The 'chicken' will pick up the dark color, and soak up a lot of the dressing.
- Divide spinach and walnuts evenly on large plates. Divide 'chicken' mixture and dressing on each salad. Enjoy!
