Cranberry Orange Muffins

These couldn't be easier to make! They are satisfyingly tart, but sweet enough to tempt even the most discerning of bakers.

Ingredients (makes 12 muffins):
1 can of cranberry sauce about (1 1/4 cups, use jellied or whole)
1 cup orange juice 
1 tbsp orange zest (this is optional, but it gives a bit more of an orange kick)
1/2 cup margarine, melted
2 tsp vanilla extract


2 cups all purpose flour (I also like to use a combo of whole wheat and white, just for the fibre)
1/2 cup sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt

1) Combine wet ingredients in a bowl. Add dry ingredients, and fold in. (I know more 'seasoned' bakers will separate/mix dry from wet, but I never do, too many steps for me :) ) Place just over 1/4 of cup of batter into greased muffin cups.
2) Bake in a 350 degree oven for 20 minutes, or until slightly browned on the top. Enjoy!
