Peanut Butter Banana Brownie Pie (Sugar-free, Gluten-free)

You can either make this recipe completely raw, or you can have it almost raw (with peanut butter instead). I prefer the peanut butter version, the raw version is REALLY good too. This is so simple to make, has NO ADDED SUGAR, and can be made with your favorite nut butter.



Ingredients (Makes 1 pie in a spring form pan):
Brownie Layer:
1 1/4 cup walnuts (soaked in water for at least 2 hours, drained completely)
1 cup dates
1/3 cup cocoa powder
1 tbsp coconut oil
1/4 tsp sea salt
1 tsp vanilla extract (optional: but adds a bit more flavor depth)
water (if needed)

Nut Butter Layer:
2-3 ripe bananas
1/3 cup dates (you can add more if you want it sweeter)
1 cup nut butter (for almost raw, use peanut butter. For 100% raw use almond butter, or cashew butter. For raw, if you want a bit more of a peanut butter effect, add 1 tbsp of tahini)
1/4 cup coconut oil


Bananas, sliced (optional garnish)

1) For the brownie layer, blend/ process all ingredients together until sticky ball is formed. If you are using a blender that is not very strong, add a bit of water (no more than 1/8 cup), and try blending the nuts, and dates separately first. Press on to the bottom of a spring form pan, and set aside.
2) For the nut butter layer, blend all ingredients together until smooth. Pour over-top of the brownie layer, and set aside. Place in the freezer for about 3 hours. You want the nut butter layer to set (it will become sort of fudge like, but not completely solid) Garnish with additional bananas, if desired. Store in the freezer. Enjoy!

  1. I was just thinking "What can I eat for breakfast? I want some of that pie", to which I thought "No...you can't eat that for breakfast!", to which my more discerning self replied, "Why can't you, everything in it is what a perfect breakfast should encompass: protein and fibre!".
