Sweet Sesame Broccoli and Carrot Salad

This salad is a sweet toss, that has body happy ingredients that are common in most households. Broccoli and carrots go well together, not only because of their crunch, but also because of their color. This salad was inspired by the mayonnaise version you may have made/ had at picnics. You can play with this salad however you like, and the dressing would go great with just about any salad.

Ingredients (makes one large bowl):
2 carrots, diagonally sliced
2 heads of broccoli, roughly chopped
1/4 cup sunflower seeds (you can use any seed/ nut you like)
1/4 cup raisins
Dressing:
1 tsp fresh, minced ginger
1 garlic clove, minced
1 tsp agave nectar
2 tbsp tahini
1/3 cup peanut butter
1/4 cup apple cider vinegar
2 tbsp soy sauce

1) Blend all of the dressing ingredients together until smooth. Toss with the vegetables, seeds and raisins. Enjoy!
