Mango Tofu

Yum. I got this recipe from one of my favorite cookbooks "Vegan with a Vengeance". It had a ton of steps that I was too lazy to do, so I adapted it slightly from that version. This is probably one of my favorite ways to eat tofu, so it's a good one for "Tofu Virgins".


Ingredients (4 big portions, or 6 small):
2 tsp ginger, grated
3 garlic cloves, minced
1 jalapeno pepper, diced (seeds and ribs removed)
1 tsp sesame oil
1 mango, chopped
1/2 cup maple syrup
1/2 cup vegetable stock
1/4 cup lime juice
1 cup of orange juice
2 tblsp rice vinegar (you can use apple cider vinegar)
1/2 tsp cinnamon
salt and pepper to taste (pinch of both)

1 tblsp olive oil
2 blocks of tofu, "prepared"

1) In a saucepan saute oil, garlic, ginger and jalapeno on medium heat for about 2 minutes (stir consistently so that the garlic doesn't burn). Add mango, maple syrup, and vegetable stock. Cover and simmer for about 20 minutes (or until it begins to thicken slightly).
2) In a large frying pan, heat oil over medium heat. Lightly brown both sides of tofu cutlets (about 3 minutes per side).
3) Add the remaining ingredients to the marinade/ sauce. Stir to combine. Pour over tofu in the pan, and let simmer for about 10 minutes (or until the tofu begins to absorb liquid, and the sauce thickens). Enjoy! (I serve this over rice, or just on its own).
