Energy Balls

These little lovelies are full of fiber, and fill you up quickly! I like to take these on road trips, or on hikes. You could also munch on these bad boys in the morning, with a coffee. Yum! (Just a friendly heads up: Dates are naturally filled with fiber, so you may need to visit the toilet...I found this out the hard way).

Ingredients (makes 25 balls):
2 cups of pitted dates
1 1/2 cup peanut butter
1/4 cup tahini (or more peanut butter)
3 cups of quick-cooking oats
1/2 cup shelled sunflower seeds, or any other kind of seed, like sesame or chia (optional)

1) Place first 3 ingredients in a food processor. Process on high until the mixture is smooth. If needed, add a little bit of water to help the mixture process.
2) Mix processed ingredients with oats in a large bowl. Roll into 1 inch sized balls. Roll balls into sunflower seeds (pressing slightly so that they stick). Place in a tupperware container, in the fridge (let them set for about 30 minutes). Enjoy!
