Blueberry Peach Pistachio Crumble Pie (RAW)

Another RAW beauty. I can never resist the ripe peaches, and juicy blueberries of the season. I picked up a bunch of them today, and whipped together this RAW pie (on account that I always like to keep one in the fridge to munch on during the week). I LOVE pistachio nuts, and they go great with fruit, especially peaches. This looks lovely, and is surprisingly easy to make. You can use any of your favorite fruits (I considered a strawberry banana version of this, with almonds instead of pistachios, but like I said, the peaches looked kick-ass).

Ingredients (makes 1 pie):
Crust:
1 1/2 cups walnuts
3/4 cup pitted dates
1/4 cup cocoa powder
1 tsp vanilla extract, optional
1/4 tsp sea salt

Fruit:
3 peaches, sliced finely
1 cup blueberries
1 tbsp lemon juice (bring outs the flavor of the fruit)
1 tsp lemon zest (optional)
1/8 cup agave nectar

Crumble:
3/4 cup pistachio nuts (make sure they are RAW)
1/4 cup oats
1/4 tsp sea salt
1 tsp vanilla extract
1/3 cup dates

* In the photo I did a little chocolate drizzle, which can easily be made by mixing cocoa powder with coconut oil.

1) Blend all of the crust ingredients together in a blender until a large ball is formed. Press the crust into a pie dish, or an 8 x 10 dish. Set aside.
2) Mix all of the fruit together with the lemon juice, zest and agave, set aside.
3) For the crumble, process all of the ingredients together until a crumble is made.
4) To assemble, pour the fruit mixture on to the crust base, followed by a sprinkling of the crumble, serve and enjoy!
