Portobello Mushroom Cap Pizzas: Two Ways

I was lucky enough to have my husband in the grocery store with me today (that may or may not be sarcastic), when, as always, he asks me what we would have for dinner. I told him that since we had a heavier meal the night before, we would be eating a RAW, healthy meal. To which he replied, "Awwww....why do you have to make everything SO healthy???". Although I was seething at the time, he may have had a point. Sometimes I go a little too far and make EVERY component of the meal healthy. I think this is good 70% of the time, but there is that 20% of the time where it should be mostly delicious, and somewhat healthy, and that wonderful 10% of the time where it can be delicious, ONLY (those ratios may not be accurate). So, pizza's, two ways: mine, and my husbands (who is always happy if he can use cheese, even if it is vegan). Both use portobello mushrooms for the crust, 1 is completely RAW, and the other is roasted, and vegan 'cheesed'. Both, I think, are delicious, so the only real decision is how RAW do you want to go?

1) My Pizza (ladies first)
Name: Avocado Almond Basil Delight
Ingredients (serves 2):
4 portobello mushrooms
balsamic vinegar (optional)
1/2 red onion
1/2 lemon, juiced
a pinch of sea salt
a pinch of pepper

1 avocado, sliced
1/2 cup cherry tomatoes, crushed
a few fresh basil leaves, chopped (for garnish)

Almond Cheeze:
1/2 cup almonds, soaked in water for at least 1 hour, drained
1/3 cup sun-dried tomatoes
a few fresh basil leaves
2 cloves garlic, minced
1/4 tsp sea salt
2 pitted dates

1) Mix the thinly sliced onion with the lemon juice, salt and pepper, and set aside for at least 30 minutes. The onion will begin to soak up all of the lemon and 'cook' slightly in the acid.
2) Blend all of the almond cheese ingredients together in a blender until smooth. Drizzle the mushroom caps with balsamic vinegar (if using). Fill the mushroom caps with the almond cheese, followed by the crushed cherry tomatoes, chopped avocado, and onion mixture. Garnish with fresh basil, and enjoy!

2) Husband's Pizza
Name: More Cheese Please
Ingredients (serves 2):
4 portobello mushrooms
oil
balsamic vinegar (about 2 tbsp)
Pizza Sauce
Vegan cheese

Your favorite toppings, some of Adam's suggestions:
Fresh Basil
Pineapple
Bell peppers
Red onion
Vegan Bacon

1) Gently oil the outside of the mushroom caps. Drizzle with balsamic vinegar. Place the sauce on the mushroom caps, cover with vegan cheese and your favorite toppings, and bake in a 350 degree oven for about 20 minutes (or until the cheese melts, and the mushroom softens slightly). You can also grill these. Enjoy!
