These are a great bean burgers, made with accessible, simple ingredients. This is my go to for bean burgers because it is packed with other veggies, other than just beans.
Ingredients (makes 8 burgers):
1 onion, diced
1 tblsp oil
1/2 cup carrot, diced
1/2 cup red bell pepper, diced
1/2 cup zucchini, diced
2 garlic cloves, minced
1 tblsp dried Italian seasoning
2 cans of roman beans (or any kidney bean)
2 tblsp of soy sauce
3 tblsp ketchup or tomato paste (a good variation would also be a yummy barbecue sauce)
2 tblsp dijon mustard
A pinch of salt and pepper
a few dashes of hot sauce, or 1/4 tsp cayenne (optional)
1 1/2 cups oat flour (Just process oats in a processor or blender until a flour is made)
8 hamburger buns
1) Saute onions in oil for 1 minute (or until translucent). Add vegetables and saute for 3 minutes. Add garlic and herbs and saute for 2-3 minutes. Remove from heat and let cool.
2) In a large bowl, mash beans with a potato masher. Add soy sauce, ketchup, mustard, salt/ pepper, and combine well. Add vegetables and oats and stir until incorporated.
3) Make 8 patties (flattened) and place on baking sheet. Chill for at least 30 minutes in the fridge. Oil a grill and grill burgers until slightly brown on both sides (about 3-5 minutes). Add you favorite cheese or toppings and Enjoy!
