Mexican Caviar

This is delicious. I found this recipe while blog browsing and I am so happy that I did. Pre-warning, this stuff is addictive, but luckily it is relatively healthy. Eat this with tortilla chips.

Ingredients:
1 onion (red or white), finely diced
2 peppers, finely diced (like to use green and red)
2 celery stalks, finely diced
1 can black beans
1/2 cup corn
1 can lentils
1/2 cup olive oil
1/2 cup white sugar
3/4 cup apple cider vinegar
1 Tbsp water
Salt and pepper to taste

- Combine diced vegetables in a bowl. Set aside. 
- In a small pot, combine liquid ingredients, sugar, salt and pepper. Over medium heat, bring to a boil and set aside until slightly cooled (just until it is not hot). Pour over vegetable mixture, stir. Let marinate for at least overnight. When finished, strain excess liquid. Enjoy with tortilla chips. Lasts for up to 3 weeks in the fridge.
