Best Vegan Caesar Salad Dressing

This is another recipe from "The Kind Diet". It is by far my favorite vegan Caesar dressing. Give it a whirl (literally, in a processor) and let me know what you think!

Ingredients (serves 8):
1 large head of romaine lettuce, diced (I like to cut it up with scissors)
1/2 cup or more of croutons

  • 2 tablespoons blanched or roasted almonds
  • 3 garlic cloves, minced
  • 3 tablespoons Dijon mustard
  • 2 tablespoons soya sauce
  • 1 tablespoon tahini
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons- 1/4 cup extra-virgin olive oil
1) Puree all dressing ingredients until smooth. Mix desired amount into romaine and croutons. Enjoy!
