Weird? No way! This soup is super duper healthy, as well as delicious. You may think that this soup wouldn't have much flavor, but you would be wrong because it is a taste sensation! 1 whole head of garlic will do it, and trust me it will be balanced and not overpowering. Try it out, tell me what you think.
Ingredients (6 or more servings):
1 whole head garlic, cloves peeled and minced
1 onion, finely chopped
1/2 tblsp olive oil
10 cups vegetable broth
1 bunch of kale, or any mild flavored lettuce leaf (romaine could work), finely chopped
2 potatoes, diced
1 small zucchini, diced
1/2 container of cherry tomatoes, roasted
1 tblsp seasoned rice vinegar
salt and pepper to taste
1) Roast cherry tomatoes on a lightly oiled sheet in a 400 degree oven for about 25 minutes (or until they burst). Chop roughly.
2) Saute onion and oil in a large soup pot until translucent. Add minced garlic and saute for 1 minute. Add vegetable broth, kale, potatoes and zucchini. Bring to a boil and let simmer for about 15 minutes. Add the remaining ingredients and let simmer until the potatoes become soft (about 10 more minutes). Enjoy!
