Coconut Frosting

This is an awesome frosting that I got from "Vegan with a Vengeance". Try it with your favorite cakes or cupcakes.

Ingredients (Icing for two round cakes, or 24 cupcakes):
1/2 cup of Earth Balance Butter, or Margarine
1/2 cup of coconut milk
2 tsp of vanilla extract
4 cups of icing sugar
1 1/2 cups of coconut (any dried type you like)

1) Blend all ingredients in a large bowl. Add additional sugar to your liking. Enjoy!
