Chocolate Peanut Butter Shells

These are delicious cookies, a recipe that I got from the cookbook "100 Best Vegan Baking Recipes". Essentially, these are a peanut butter cookie wrapped with a chocolate cookie.

Ingredients (Makes 12-24 cookies):
Dough-
1 ½ cups flour
½ cup cocoa
½ tsp baking soda
½ cup margarine
½ cup brown sugar
¼ cup soy milk
1 tsp vanilla

Filling-
3/4-1 cup icing sugar
½ cup peanut butter
1/3 cup chocolate chips
½ tsp salt

- For the dough, mix wet, then dry ingredients. Dough should look like playdoh once mixed, and you should be able to mix it with your hands without it sticking to them.
- For the filling, incorporate icing sugar into peanut butter until absorbed, no longer stiff and not shiny. Stir in chocolate chips. 
- Flatten a small piece of dough into a disc. Place 1 tsp of peanut butter mix into centre. Fold the dough over peanut butter and roll into a ball.
- Place balls on baking sheet, sealed side down. Bake for 8 minutes in a 350 degree oven, until cookies crack slightly. Serve warm, or let cool and heat for 10 seconds in the microwave before serving. Enjoy!
