This is my 'go-to' spread for any sandwiches, wraps, or pizzas, when a cheesy kick is needed. For cashews, only some brands are in fact RAW (do to the processing), so it is important to be aware of which ones you are buying (if you are worried about the RAW element). You can also use any creamy, white nut, such as a macadamia nut, or pine nuts for this spread. This spread is great as a dip, but also a great compliment to any savory or spicy dish. You can add all sorts of flavorings to this (perhaps cayenne pepper, jalapeno, or herbs) to match your favorite 'cheese' spreads.
Cashew Spread:
1 1/2 cup cashews, soaked in water for at least 2 hours, drained
1/4 cup water
1 tbsp apple cider vinegar, and 1 tbsp lemon juice (You can use the combination of both, or all of one of them. The apple cider vinegar gives a sweeter kick, while the lemon juice allows you to mock more of a 'cheese' flavor)
1/4 cup nutritional yeast flakes
1-2 cloves garlic, minced
1/2 tsp sea salt
a pinch of pepper
1) Process, or blend all of the ingredients together until smooth. Add additional lemon juice, vinegar or garlic, depending on your taste.
