If you have never heard of chia seeds, you should research them, and if you have never tried them, you should. These little seeds pack an amazing nutritional punch, and work well in in creamier desserts because of their ability to soak up water, and become slightly gel like. In this recipe, the chia seeds act like a tapioca, or a rice, which makes the pudding that much more appetizing. This is an easy, fun dessert to whip together which capitalizes on the chia potential, while offering a delicious creamy mouth pleasing treat!
Ingredients (serves 4-6):
1/4 cup chia seeds
1 can coconut milk (I use light)
1/2 cup dates
1 ripe banana (you can use more than one if you like a stronger banana flavor)
1 tbsp cocoa powder
1/8 tsp ground cloves
1/4 tsp cinnamon
1/4 tsp dried ground ginger
1/2 tsp vanilla extract
1) Place the chia seeds in the milk, in a small bowl. Stir gently. Allow to sit in the fridge for about 20 minutes, stirring half way to create a jelly like mixture. Keep cool in the fridge.
2) Blend all of the remaining ingredients together in a blender until smooth. Fold in the chia mixture. Chill in the fridge, and serve. Enjoy!
