I get so excited when asparagus pops up in the grocery stores. I also think it is hilarious how it makes your pee smell....but that's besides the point. The point is that this recipe is easy to make, tastes delicious, and would go great as a side to many dishes.
Ingredients (serves 2-4):
1 big bundle of asparagus, stems removed
1 1/2 tbsp olive oil
a few shakes of sea salt
a pinch of pepper
2 garlic cloves, minced
1 1/2 tbsp balsamic vinegar
1) Toss asparagus with oil, salt and pepper. Place on a baking sheet, and bake in a 425 degree oven for 10-15 minutes, shaking half-way through until they are tender, but crisp. Also half way through cooking, shake in minced garlic (this makes it so the garlic does not burn). When finished, drizzle with balsamic vinegar, and serve. Enjoy!
