Sweet, creamy, delicious, minimal ingredients. I love this soup!
Ingredients (makes about 6 portions):
1 tsp olive oil
1 large can of corn (any kind you like)
1 medium onion, chopped
2 large stalks of celery, chopped
3 medium white potatoes, diced
3 cups of vegetable stock
1/2 tbsp dried Italian seasoning
1 cup- 1 1/2 cups of soy milk (or alternative milk, depending on the desired thickness)
salt and pepper to taste
1 shake of hickory smoke (optional)
1) Heat oil in a large saucepan. Add whole can of corn and onion, and cook until onion is translucent.
2) Add vegetable stock and blend half of the mixture until smooth. Place blended portion back into the saucepan and add potato and celery. Boil on a lower heat until vegetables are soft (about 20 minutes).
3) Add seasoning, milk, salt and pepper to taste, and hickory smoke (if using). Boil for about 5 minutes, constantly stirring to break up the potatoes slightly. Enjoy!
