Another great recipe from "Vegan with a Vengeance"! These are so rich, oooeey gooey, and totally NOT like any brownies I have ever had. I don't know if these can exactly be classified as brownies, but....I think they are in a similar field.
Ingredients (makes about 9 portions):
3/4 cup of butterscotch chips (or chocolate it you are feeling the need)
1 cup of mashed bananas
1/3 cup of canola oil
1 cup of sugar
1 tsp vanilla
3/4 cup of all purpose flour
1/4 cup of cocoa powder
1/4 tsp of baking soda
1/8 tsp salt
1 cup of mashed banana
2 tbls sugar
1/4 cup of soy milk (YOU MUST USE SOY MILK...it won't work otherwise)
1/2 tsp vanilla extract
1 tblsp of arrowroot powder
1 banana, thinly sliced
1) Melt the chips. Beat the first 9 ingredients in a large bowl once the chips are slightly cooled.
2) In another large bowl, beat next five ingredients for 3 minutes.
3) Spread the Brownie batter into a 9 x 13, greased baking pan. Pour the banana mixture on top. Bake in a 350 degree oven for about 35 minutes. Remove from the oven and let cool for 15 minutes. Place sliced bananas on top and put in the fridge until cooled. Slice into squares. Enjoy!
