This is an easy, creamy pasta dish, and with the addition of peanut butter, it is a nice break from the ordinary.
Ingredients (serves 4-6):
2 tsp oil
1 small onion, diced
2 cloves of garlic, minced
2 tsp diced fresh ginger
3/4 tsp. red pepper flakes, or to taste
1/2 cup peanut butter
1/2 cup coconut milk
1 Tblsp soy sauce
2 tsp brown sugar
2 tsp lemon juice
salt and pepper to taste
225 grams whole wheat pasta
1 bunch of green beans
1) Cook pasta in a large pot of water until al dente. Boil green beans for about 8 minutes and incorporate into the pasta.
2) Saute oil, onion, garlic, and ginger for about 3 minutes. Add all other ingredients and bring to a boil/ bubble. Mix peanut sauce with the pasta. Add a little more coconut milk or oil if you want a slightly thinner sauce. Enjoy!
