Lemony Roasted Potatoes

This is one of my faves from the book "Veganomicon". These are ultra lemony, and super satisfying. Try em' out, blame the author if you don't like them!

Ingredients (serves 6):
2 1/2 pounds of white potatoes, diced
1/4 cup olive oil
6 cloves garlic
1/2 cup lemon juice
1 cup vegetable broth
2 tsps dried oregano
2 tsps of salt (I prefer to use sea salt)
1 tsp tomato paste
freshly ground black pepper

1) Heat the oven to 375 degrees. Place the all of the ingredients (except for the potatoes) into a baking dish (9 x 12 works best). Whisk together.

2) Add potatoes and stir to coat. Cover with tin foil and bake for about 40 minutes, taking them out of the oven every 10 minutes to turn. Enjoy!
