Oh my goodness I could die and go to heaven after eating this rice. For whatever reason, the peanuts, the sesame, I think this has the best combination of ingredients. I got this recipe from the cookbook "The New Moosewood Cookbook" and only made minor changes.
Ingredients (makes enough for 4-6 sides):
2 cups of brown rice
3 cups of water
Sauce:
1/2 cup of sesame oil
1/2 cup of orange juice
2 garlic cloves, minced
1 tsp salt
2-3 tblsp soy sauce (depending on how much you like, I always seem to add more)
1/2- 1 tsp crushed red pepper flakes (I like it spicy, so I add 1)
2 tblsp of rice vinegar or apple cider vinegar
Other:
1 can of chopped pineapple
3 green onions, chopped
1 stalk of celery, finely minced
1 red pepper, diced
1 can water chestnuts, drained and diced
1/2 cup of raisins
1 cup of roasted peanuts, coarsely chopped
bean sprouts (optional)
1) Cook rice (if you switch the rice to, say a jasmine rice, the package instructions will differ). Overall, you need about 3 cups of cooked rice).
2) Process all sauce ingredients together. Pour over top of hot rice in a bowl, and stir to combine. Let sit until it cools to room temperature. Cover and refrigerate until cold.
3) Prior to serving, add all other ingredients. Enjoy!
