This is a vegan upgrade to the typical coleslaw. You can make this as spicy, or as sweet as you want to, but both go hand and hand in this mix.
Ingredients (serves 4-6):
1 small bag of coleslaw mix (preferably one with red and white cabbage, and carrots)
1 apple, cored and diced (choose a tart apple)
3 green onions, diced
1 cup pecans, chopped
1/4-1/2 cup of raisins (this adds the sweeter flavor)
Dressing:
1 tablespoon Dijon mustard
1 teaspoon brown sugar
1/2-1 jalapeno pepper, seeded and finely diced
1 cup vegan mayonnaise (My favorite is Vegenaise)
2 tblsp lemon juice
salt and pepper to taste
1) Whisk all dressing ingredients together. Fold in all other ingredients. Serve cold. Enjoy!
