Sweet Potato Fries and Avocado Dip

Delicious. I veganized this recipe from one that I found on the Food Network. This is delicious, nutritious and a nice new take on french fries!

Ingredients (makes enough for 2-4 people):
2 Large sweet potatoes
2 tbsp olive oil
1 tsp paprika
1 tsp chili powder
1/4 tsp cayenne pepper
a few shakes of salt and pepper


Avocado dip:
1 avocado
1/2 cup of vegan mayonnaise (my favorite is "Vegenaise")
2 green onions
a few shakes of hot sauce

1) Slice sweet potatoes into desired french fry shape. In a large bowl, toss potatoes with all other fry ingredients.  On a lightly oiled baking sheet, bake fries for 40 minutes in a 425 degree oven (you may need to check on them half way through and rotate them).
2) For the dip, process all ingredients together. Garnish with extra green onion, if desired. Dip fries into the dip and enjoy!
