This is delicious. I like to spread it on muffins, or mix it into oatmeal. Great stuff!
Ingredients (makes 3 500ml jars):
10 apples (any slightly tart apple works great), cored and chopped
1/2 cup of apple cider (you can use apple juice, but the cider makes for a richer butter)
1 cup brown sugar
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1 tsp vanilla extract
1) Add all ingredients to a large pot. Cook over low heat for 45 minutes (or until the apples break down).
2) Blend apple mixture in a blender until smooth. Transfer back into the pot and simmer on low heat for roughly 2 hours (You want it to lose most of its water content. It should literally look smooth like margarine).
3) Transfer the apple butter to canning jars, or freeze. I also like to keep a little aside in a small container in the fridge. Jarred, this lasts for up to a year. Enjoy!
