Hamburger Helper: A friend to moms everywhere! Although it is typically just slop in a pan, my version is both delicious and nutritious. It is made with my favorite ground 'beef' product called "Yves: Ground Round". This meal has very few ingredients, and can be whipped up in about 20 minutes.
Ingredients (makes enough for 4-6):
1 small onion, chopped
1 tbsp olive oil
1 package of Mexican Flavored Ground Round (if you use the Italian Flavor, you will have to season it. My mixture is 3/4 tbslp chili powder, 1/2 tblsp paprika and cumin, and 1/4 tsp garlic powder and cinnamon)
1 bell pepper, chopped
2 cups smaller pasta (I like mini fusilli)
3 3/4 cups cups water (it will seem like a lot but it will evaporate as it simmers)
1/2 tsp salt
1 5.5 oz can tomato paste
1/2 cup soy, rice or almond milk
1/2 cup nutritional flakes
1) Add oil to a large pan, sauteing onion and ground round until onion is translucent, and ground round darkens slightly (about 4 minutes), over medium heat. Add the bell pepper and saute until it is softened, slightly (about 2 minutes).
2) Add pasta, stir and pour water over top. Sprinkle with salt and bring to a boil. Once boiling, turn down heat to low and simmer for 20 minutes. Keep an eye on it, stirring once in a while so the pasta doesn't stick.
3) Once the pasta is al dente, and the water has been mostly soaked up by the pasta, fold in tomato paste and milk, blending evenly. Bring to a boil. Turn the heat off and stir in nutritional yeast. Let stand for 5 minutes so that the pasta has time to soak in the flavors. Enjoy!
