Black Bean Sweet Potato 'Patties'

So, you have some options with this one. I enjoyed this as either a burger, 'falafel' style in a wrap, or on top of a salad. Either way, these are a delicious, and easy way to pack your meal full of fiber, protein, and flavor!

Ingredients (makes 4 burgers, or several patties):
1 tsp oil
1 medium sweet potato, cut into small cubes
1 cup water

1 can black beans, rinsed, drained and dried off with a towel
2/3 cup walnuts, ground into a coarse flour (you can also use oats, or another type of oily nut)
4-5 fresh basil leaves, chopped
1-2 cloves garlic, minced
1/2 tbsp lime or lemon juice
1 tsp chili powder
1/2 tsp cumin
1/4 tsp sea salt
a few grinds of pepper

1) Heat the oil in a large frying pan. Saute the sweet potato cubes until they pick up some color, and soften slightly (about 5 minutes; shaking constantly). Pour in 1 cup of water and let simmer in the pan until the sweet potatoes are soft (about 10 minutes), and the water has evaporated.
2) Mash the black beans in a large bowl. Mash in sweet potato, slightly, so that some of the cubes stay intact. Fold in all other ingredients. Divide the mixture into 4 patties for burgers, or in desired sizes (I make mine into 2 inch size flattened falafel shapes). Place in the fridge for at least 1 hour, or until ready to cook.
3) To cook, fry them in a frying pan with a little bit of oil for about 4 minutes on each side. An alternative option is to bake them on a baking sheet in a 350 degree oven for 20 minutes (flipping half way through). Eat them as a burger with your favorite condiments, on top of a salad with your favorite dressing (my favorite), or in a wrap/ sandwich. Enjoy!
