This recipe is tweaked from one I found in a book called "The Vegan Table". Is there anything more glorious than peanut butter? I mean, who would have thought that a nut could be in every child's lunch box in the world at one time or another? And here we find it again, in this soup, a soup of Kings: African Kings, since I suppose that is its origin.
Ingredients:
1 tsp olive oil
1 medium onion, diced
2 garlic gloves, minced
1 red pepper, chopped
1/2 tblsp brown sugar
1/2 tsp cumin
1/2 tsp cinnamon
1/4 tsp cayenne pepper
1/3 cup smooth or crunchy peanut butter
2 small sweet potatoes
2 cups vegetable stock
1/2 can red kidney beans (You can also use chick peas)
2 tomatoes, diced
1 tsp salt
1 tsp pepper
1) Saute the onions and garlic in oil for 5 minutes.
2) Add all powdered ingredients and stir for 30 seconds. Add the remaining ingredients and simmer for about 30 minutes. Garnish with peanuts and cilantro, if desired. Enjoy!
