If you are chocolate lover you need to try this recipe. You tweak it in so many ways, and the biggest bonus it is animal free and all of the contents have health benefits. It is also completely RAW which means that all of the nutrients are kept intact. So, it is a chocolate that is good for you to eat....try it. Trust me.
Ingredients (Makes enough for 3 good sized bars):
3/4 cup of cocoa powder
1/2 cup or more of real maple syrup or agave nectar (both taste great, although the agave nectar tends to be a bit sweeter)
1/3 cup of coconut oil
1 tsp vanilla
a pinch of sea salt
1/4 cup of chopped almonds or other nuts (optional)
1/4 cup of raisins or dried fruit (optional)
1) In a medium sized bowl, whisk cocoa powder and syrup/ honey and salt together. Set aside.
2) Boil a small pot of water. Place coconut oil into the chocolate mix. Place the bowl on top of the boiling pot of water and whisk mixture together until the coconut oil melts (do not boil, you just want the coconut oil to blend into the mixture).
3) Take mixture off of the low heat and add vanilla and desired fruit or nuts. Mix.
3) Place a sheet of plastic wrap over a large plate. Scrape the chocolate mix on to the plastic wrap, and spread to desired thickness. Transfer plate to the freezer and allow to set. The finished chocolate is not as solid as regular store bought chocolate, but it is also dependent on the additions of ingredients. Enjoy!
