Jerk Tofu over Sweet Potato Mash

Because I am not a huge tofu fan (it is really difficult to make it taste good), I am often on the lookout for ways to make it taste better. This is definitely one of them. If you really hate tofu you can use another meat alternative, such as seitan, or tempeh. This marinade would go great as a dressing for any roasted vegetables as well (if you really don't dig the tofu idea).

Ingredients (enough for 4):
Marinade:
1/8 cup oil
1/2 cup vegetable stock
3 garlic cloves, minced
1 tbsp minced fresh ginger 
1/4 cup molasses
1/8 cup lime, or lemon juice
1/8 cup apple cider vinegar
1 tbsp hot sauce
1 tbsp brown sugar (you can also use white sugar)
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp crushed cloves 
1/2 tsp sea salt
1/4 tsp pepper

1 package of tofu, "prepared", and sliced (you can also use any of your favorite meat alternatives)

2-3 green onions, chopped (optional, garnish).

Sweet Potato Mash:
2 sweet potatoes, chopped (I like to keep the skins on, but you can peel them if you like)
Boiling Water
1/8 cup milk alternative
1 tbsp vegan butter, or margarine (I like "Earth Balance")
1/2 tbsp brown sugar
a pinch of salt and pepper

1) Whisk all ingredients of the jerk marinade together. Place prepared tofu slices into shallow dish and pour marinade over-top. Allow to marinade for at least 2 hours (but overnight is best).
2) For the mash, boil sweet potato until tender. Drain water, mash roughly with other ingredients, and set aside.
3) For the tofu, heat a large pan over medium heat. Brown both sides of the tofu (about 4 minutes on each side). When browned, pour in additional marinade and allow to bubble until the marinade condenses, shaking constantly (about 1 minute more). You can also grill the tofu, adding additional marinade, condensing the marinade separately. Serve tofu on top of the potato mash, drizzling with any extra sauce, and garnish with green onions, if desired. Enjoy!
